FOOD / 2

Pin It Now!

My new favorite thing to eat is Spaghetti Squash.
Why?
1. It is so frickin cool! Sorry, but all the other veggies need to step up their
it factors. Just saying
2. Its like "zero calories, carbs, and fat! (40cal. 8g carbs p/s)
3. It taste just like angel hair pasta.
Plus the health, minus the whack of from the sleep stick an hour later.
So extra servings are alright here!

So I figured I'd introduce you all to it,
if you don't know about it already.

I don't even like to count this as cooking because it is so easy.

Just Remember:
1.Slice it- in half
2. Gut it- remove all the seeds and strings
3. Bake it- face down in a 1/4 cup of water at 350 degrees for 45 minutes
(a glass casserole dish is what I used)
4. Rake it- using a fork or a pasta spoon
(the pasta spoon was much easier while handling the hot squash
and you can get more of the squash out, as opposed to using a fork)

Note: I gave my squash a massage of pepper, salt, and olive oil.
This allowed it to marinate as opposed to having to season it after
it was cooked.

Meat Sauce:
1lb of Ground Chicken (use whatever meat you like)
1Tbsp of Ground Black Pepper
1Tbsp of Ground Sea Salt
1Tbsp of Italian Seasoning blend (farmer's market)
1 Tsp of Basil
1Tsp of Roasted Red Peppers (optional)

Mix all of your spices with the meat and pan sear until
thoroughly cooked.
Add your tomato base and season to taste.
 Serve over your spaghetti squash
Et Voila!!!  Your done!

Hope this helps with your menu this week.
Bon Appetit!

FOOD / 1

Pin It Now!
If you follow me, you probably get glimpses of my food pre-scarf.
Instead of just indulging in the food porn phenomena and leaving you drooling,
I thought I'd share the recipe to some of my favorite meals to prepare
for my family.
I know for a fact that I am not the only 'round the clock working wife and mother
so i figure why not help each other out a few quick & easy ideas made
right at home and not in the drive thru.

You'll Need:
Boneless & Skinless Salmon Freshly Cooked and Flaked or Canned
1/3 cup of chopped red and green bell peppers
1/2 cup of plain bread crumbs
4 tbsp of mayonnaise
1 tsp black pepper
1 tsp sea salt
1 tsp of cayenne
2 tsp of Cajun seasoning blend
Prep time: 10 mins
Cook time: 10 mins

Pan sear each cake until golden brown and secured.
(if it's crumbling allow it to sear a little longer)
Throw a bed of arugula, red lettuce and mixed greens on a plate
and top with the Salmon Cakes.
Et Voila!!!!

WEEKEND INSTA-FOOD

Pin It Now!
Happy Monday!!
Hope you had a great relaxing, or exciting weekend.
Mine was very much filled with food.

Left to Right:
Highland Bakery: Shrimp & Grits with Jalapeno Foccacia (this will change your life)
Co-workers baby shower cupcakes from Gigi's Cupcakes
Highland Bakery pastry window
Fruit from the market washing using this method

Believe it or not, I am trying to eat healthier.
Don't base my regimen on these photos,
it's just that my healthy foods
aren't as photographically interesting as pastries.
But I do have a few recipes on the Menu for the week
that include bright veggies, quinoa, salmon---you know, the favorites of Pinterest.
See some of my on hold recipes on my Food & Drink board

STOMPING GROUNDS

Pin It Now!
Rhinos found here

So I am constantly looking for new places to go in Atlanta, but I am always
sucked back in the portal of familiarity. So I thought that it would be nice to share
with you guys the new places I discover.
You wouldn't believe how much of Atlanta I haven't seen, even though I have been here for
a million years.  I'm hoping that will change big time.
But here are my mainstay-never fails

Boutique of choice:
for a number of reasons.  Not only are the shop girls the cutest and coolest, their collection of Free People, Hobo, Frye blended with local artists make for hours of unearthing.
And the best part is that it is in the center of Decatur
(a city made for strollin')

Lunch Spot:
Two words: Lavendar Biscuits
It's right around the corner (drive wise)
from Squash Blossom, so after you get your shopping done,
you can refuel in their cafe setting.

Thrifting Troves:
There are quite a few in ATL but I only get to visit certain ones because of my location and schedule.
Rag-O-Rama: great for hipster and vintage fashion exchange
Good ole Goodwill: Perimeter is the location I frequent. (shopping buddy's are welcome)
Poor Little Rich Girl:  for mounds and mounds of yesness.

Brunch with the Girls:
(Old 4th Ward location preferably)
If partying is your gig, this is a definite must for
Saturday brunch hour.
Still in the mood for breakfast,
choose from peanut butter french toast or Sweet potato Pancakes
topped with caramelized brown sugar drizzle....
If your in the mood for good ol southern nods try the Shrimp & Grits (with jalepeno focaccia) or the Barbeque Chicken
topped with crunchy cole slaw.

Dinner Date:
Perfect for a date night the beau. It has a great urban, lofty feel with awesome lighting, perfect for gazing into your hun's eyes
If you are comfortable enough to (really) eat and not nimble like a bird I would recommend the Brisket. It literally melts in your mouth.
The macaroni & cheese is pretty awesome too if you are in the mood for comfort food.

Wet Your Whistle:
With a outdoor rooftop option how could this not be on the list. You can overlook the city skyline from two directions and lounge on
lofty seating while sipping on sweet libations and nimbling on
mini pretty food.

Hope this helped anyone planning a mini venture to the city.
And if you have any recommendations for me to wander to, feel free to

CAMP + ONCE WED

Pin It Now!

Atlanta's Sun In My Belly teams up with Amy Osaba's crew to create heavy doses of lovely at Camp.
Creating - Art - Meaning - Purpose
A few weeks ago I went to their Decatur location for
Emily Newman & Joy Thigpen's launch of
Yup that means you can finally lay your head on the pages
(as opposed to the computer screen)
to try to emulate the magic through osmosis....
what??? everyone doesn't do that?
hmmm, well I am not ashamed, because
oh how lovely it is...pages and pages of Big Day inspiration
The above photos are just a few that I snapped while there.
take a hop on over and pick yourself up a copy.
and hey if you're ever in the area let's get a bite to eat.
Their chocolate mousse is down right sinful.

Bisous,

Kel

FIVE: C O O K

Pin It Now!

if you are anything like me, you spend
hours on pinterest drooling of "pretty food"
that you know for a fact you will not ever be able to recreate.
why?
because you have burned broccoli
or over salted rice.
Since getting married i have definitely had to exercise my wife gene and work magic in
the kitchen.
And apparently i am not that bad, because hub clears the plates and so does
the mini.
But I am hoping that with cometh age cometh confidence a la cuisine
so i am forcing myself to step inside the box that we call a
kitchen
(can't wait for something with way more counter space)
and get cooking.

If anyone has any awesome/easy recipes for a working mother and wife
please let me know!!!!

Merci!
